No matter which aeroplane we fly, why are we always served food that is bland and unappetising?

Travelling by flight is no longer a thing of the super-rich or wealthy class. Economical flight tickets are a reality, and therefore, even those from the middle-class strata enjoy travelling 1,000s of kilometres in merely a few hours. However, while the fast and comfortable mode of travelling is appreciated, what isn’t appreciated is the food that the airline company serves.

People often call the food bland and unappetising, and therefore, a question arises—are the airlines purposely feeding us bland food? The answer is no. They are not doing it purposely, and there’s a science behind it.

Change in taste buds

The taste buds of humans change when they reach 10,000 feet or higher in an aeroplane.

Oxford University’s explanation

“There are several reasons for this: lack of humidity, lower air pressure, and the background noise,” says professor of experimental psychology Charles Spence at Oxford University.

12 per cent drier

Due to less humidity, the condition at around 30,000 feet is 12 times drier than deserts.

More salt and seasoning

Chefs who prepare food for passengers add a good amount of seasoning and salt to make the food tasty. However, due to the atmospheric changes, the food is still bland.

Not the airline’s fault

In short, airline companies can’t do anything about the bland food.
