  • Ganth Gobi or Kohlrabi
  • Carrot

  • Green chili
  • Ginger
  • Salt
  • Mint leaves
  • Coriander leaves
  • Flour
  • Corn starch
  • Oil
  • Turmeric
  • Red chilli powder
  • Cumin
  • Amchur Powder
  • Chaat Masala

Recipe

  • Shred Ganth gobi, carrot, ginger, onion, and green chilli.
  • Sprinkle a teaspoon of salt, mix, and let it sit for 30 minutes to release moisture.
  • Use a muslin cloth to squeeze out excess liquid, reserving a few tablespoons.
  • Mix the grated veggies with flour, cornstarch, and spices. Add reserved liquid as needed to form a pliable dough.
  • Form the dough into small, half-inch-thick discs.
  • Heat oil in a skillet and cook the discs on medium heat until crispy and golden on both sides.
  • Enjoy the fritters hot with mint-cilantro chutney for a flavourful snack.

Kohlrabi or Ganth Gobi & Carrot Coleslaw

Ingredients

  • Ganth gobi (kohlrabi)
  • Carrot
  • Radish
  • Vegetable oil
  • Cider vinegar
  • Mustard sauce
  • Salt
  • Black pepper

Recipe

  • Peel Ganth gobi, carrots, and radishes, removing any tough outer layers. Slice into thin, julienne strips and set aside.
  • In a bowl, whisk together oil, vinegar, mustard, salt, and pepper until smooth.
  • Combine the vegetables with the dressing, ensuring they’re well-coated.

Braised Kohlrabi and Carrot with Honey

Cooking Time: 30 min

Ingredients

  • Carrots
  • Ganth Gobi
  • Butter
  • Honey
  • Water
  • Balsamic vinegar
  • Parsley
  • Salt
  • Pepper

Recipe

  • Add carrots, butter, honey, and water to a pan on high heat.
  • Simmer, then reduce heat, cover, and cook for 10 minutes, stirring occasionally.
  • Uncover, add balsamic vinegar, cook for three more minutes, and mix in parsley.
  • Follow the same steps for ganth gobi but cook slightly less time.
  • Mix cooked carrots and Ganth gobi.
  • Season with salt and pepper, garnish with parsley and serve warm.
