Tinda masala

A classic Indian dish that is simple to prepare and full of flavour.

Ingredients:

  • Tinda (Indian round gourd), peeled and cubed
  • Onion, chopped
  • Tomatoes, chopped
  • Ginger-garlic paste  
  • Cumin seeds  
  • Red chilli powder  
  • Turmeric powder  
  • Coriander powder  
  • Garam masala powder  
  • Salt
  • Oil
  • Fresh coriander for garnish  

Instructions:

  • Spice it up: Heat the oil in a skillet, add the cumin seeds, and sauté the chopped onions and ginger-garlic mixture until golden brown.  
  • Add tomatoes: Add the diced tomatoes and simmer until soft.  
  • Cook tinda: Combine the cubed tinda with turmeric, red chilli, coriander, and garam masala. Mix thoroughly.  
  • Simmer: Add enough water to cover the tinda, season with salt, and bring to a boil. Reduce the heat, cover, and cook until tender. Garnish with fresh coriander and serve hot alongside roti or rice.

Stuffed tinda

A unique and flavorful way to enjoy tinda.

Ingredients:

  • Tinda (Indian round gourd)  
  • Potatoes, boiled and mashed
  • Peas
  • Green chillies, finely chopped  
  • Ginger, grated  
  • Cumin seeds
  • Red chilli powder
  • Turmeric powder  
  • Garam masala powder  
  • Salt
  • Oil

Instructions:

  • Prepare the tinda: Cut off the tops and remove the seeds.  
  • To create the filling, Combine the mashed potatoes, peas, green chillies, ginger, cumin seeds, red chilli powder, turmeric powder, garam masala, and salt.  
  • Stuff the tinda: Fill the hollowed-out tinda with the mixture.  
  • Simmer to perfection: Heat the oil in a skillet, add the filled tinda, cover, and simmer over low heat until soft.

Tinda curry with yogurt

Ingredients:

  • Tinda (Indian round gourd), peeled and cubed
  • Yoghurt
  • Green chillies, finely chopped  
  • Cumin seeds
  • Red chilli powder

Instructions:

  • Spice it up: Heat the oil in a skillet, then add the cumin seeds. When the seeds begin to sputter, add the chopped green chillies.
  • Tinda tango: Sauté the cubes tinda until half-cooked.
  • Yoghurt magic: Whisk the yoghurt to remove any lumps. Pour it over the tinda, along with the turmeric, red chilli, and garam masala powders.
  • Simmer and serve: Cover and cook until the tinda is soft and the gravy thickens. Season with salt to taste, and serve hot over roti or rice.
