2 lotus stems, peeled and sliced into thin rounds
2 tbsp mustard oil
1 onion, finely chopped
2 tomatoes, pureed
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
2 garlic cloves, minced
Salt, to taste
Fresh coriander for garnish
Heat mustard oil until it smokes lightly, then add cumin seeds and let them crackle. Sauté onions and garlic until golden. Mix in turmeric, coriander powder, and tomato puree; cook until oil separates. Add lotus stems, water, and salt. Cover and simmer for 15–20 minutes until tender. Sprinkle garam masala, garnish with coriander, and serve hot with roti or rice.

1 lotus stem, peeled and sliced thinly
1 tbsp sesame oil
1 tsp soy sauce
½ tsp black pepper
1 garlic clove, finely minced
1 green chilli, slit lengthwise
Salt, to taste
Spring onions, chopped (for garnish)
Blanch the lotus stem slices in boiling water for 5 minutes, then drain and pat dry. Heat sesame oil in a pan and add the minced garlic and green chilli. Sauté for a minute. Add the lotus stem slices, stir-fry on high heat for 5–6 minutes until golden and crispy. Season with soy sauce, black pepper, and a pinch of salt. Mix well and cook for another minute. Garnish with chopped spring onions and serve hot as a snack or a side dish.
