Sabzi of the Day - Simple Cabbage Recipe Preparations for Quick Home Cooking

Known for its crisp and mild flavour, the leafy vegetable is used to prepare a wide array of dishes in India

A highly nutritious leafy vegetable, cabbage is rich in vitamins C, K, and fibre. Therefore, it is widely consumed across India and is used to produce an array of a variety of tasty dishes. Given cabbage is mostly harvested during the winter season in India, this is an apt time to share a number of simple yet delicious cabbage recipes. After all, winter is here!

Fried Cabbage

Cooking time: 30 minutes

Ingredients

  • 1 tablespoon coconut oil
  • 1 cup sliced red onion
  • 1 large clove garlic, minced
  • ½ teaspoon cumin seeds
  • ½ head green cabbage, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • ½ teaspoon garam masala

Recipe

  • Heat coconut oil in a pan and sauté onion, garlic, and cumin together.
  • Once done, add the thinly sliced cabbage in the pan and fry it.
  • Do not cover the cabbage, or it will get soggy.
  • Season the dish with salt, curry powder, and garam masala. Sauté for another 5-10 minutes on a high flame, and the dish is ready.

Cabbage Pakoda

Cooking time: 30 minutes

Ingredients

  • Chopped cabbage
  • Besan or gram flour
  • Chopped coriander leaves
  • Chopped onion
  • Turmeric powder
  • Red chilli powder
  • Asafoetida
  • Sesame seeds
  • Salt

Recipe

  • In a bowl, mix the besan with salt, chopped onion, coriander leaves, turmeric, red chilli, and asafoetida and sesame seeds with water.
  • Make sure that the batter is neither too runny nor too thick.
  • Pour chopped cabbage in the mixture and mix the cabbage well.
  • Make small balls of the mixture.
  • In a pan, heat oil and add the balls.
  • Deep fry the balls, and cabbage pakoda is ready to be served with sauce or chutney.

Cabbage Paratha

Cooking time: 45 minutes

Ingredients

  • Wheat flour
  • Ajwain
  • Grated cabbage
  • Finely chopped green chilies
  • Finely chopped ginger
  • Turmeric powder
  • Red chilli powder
  • Coriander powder
  • Cumin powder
  • Garam masala powder
  • Amchur powder (dry mango powder)

Recipe

  • Start with kneading the dough for the paratha. Make the dough with water, wheat flour, salt, and a little bit of ajwain and let it rest.
  • In a pan, heat some oil and sauté the grated cabbage.
  • While sautéing, add chillies, ginger, and all the above-mentioned masala powders.
  • Sauté the cabbage stuffing as much as possible to dry out the water. Once done, let it rest and cool down.
  • Stuff the filling in the paratha, and the cabbage paratha is ready to be enjoyed with curd or pickles.

Cabbage Coleslaw

Cooking time: 15 minutes

Ingredients

  • Shredded cabbage
  • Spring onions
  • Carrots
  • Mayonnaise or liquid cheese. Given liquid cheese is a healthier alternative compared to mayonnaise, we prefer to use liquid cheese.
  • Lemon juice
  • Salt
  • Freshly ground pepper
  • Sugar

Recipe

  • In a bowl, add a good amount of liquid cheese or mayonnaise.
  • Squeeze the lemon juice, add pepper, a little bit of sugar, and salt; the dressing is ready.
  • Finally, put the cabbage, spring onions, and shredded cabbage together—the cabbage salad is ready.

From pakoda to paratha and even a salad, the versatility of cabbage makes it a unique vegetable that must be relished by everyone, especially during the winter when it is freshly harvested and packed with nutrients.
