Sabzi of the Day - Drumsticks Delight: Easy Recipes for Flavourful Homemade Dishes

Drumsticks or moringa are used in a wide variety of dishes but are rarely cooked entirely on their own. However, in some parts of India, dishes are made with drumsticks acting as the core.

Moringa, also known as drumstick, is usually considered an ingredient in Indian cuisine. For example, it is used in mixed vegetables or sambhar but rarely used as a core to prepare a dish. However, in some parts of India, moringa is used as the base to prepare a dish in itself. Not to forget, moringa or drumsticks are rich in vitamins A, C, and E, as well as calcium, iron, and potassium and therefore, one must consume moringa at least once a week.

Sojne Data-Posto/Drumsticks in Poppy Seeds Gravy

Cooking time: 30 minutes

Ingredients

  • Peeled drumsticks, cut into a few centimetres pieces
  • Horizontally cut potatoes
  • Sugar
  • Brown mustard seeds
  • Yellow mustard seeds
  • Poppy seeds
  • Green chillies
  • Salt
  • Mustard oil
  • Paanch phoron
  • Whole red dry chilli
  • Green chillies slit
  • Onion chopped

Recipe

  • Heat mustard oil in a pan.
  • Temper paanch phorom, whole red dry chilli and green chillies for a minute and turn off the gas.
  • On the other hand, in a blender, blend and make a smooth but thick paste of poppy seeds and brown and yellow mustard.
  • Get back to the pan, set the gas on low flame and add chopped onions. Add the potatoes as well. Sauté them till they get a little mushy.
  • Once done, add the drumsticks and sauté everything together.
  • Finally, add the paste along with a little sugar and salt to balance the flavour.
  • Garnish by drizzling some mustard oil.

Sojne Datar Chorchori

Cooking time: 30 minutes

Ingredients

  • Drumsticks
  • Potatoes
  • Mustard seed paste
  • Nigella seeds (kalonji)
  • Turmeric powder
  • Red chilli powder
  • Cumin seeds
  • Sugar
  • Mustard oil
  • Water
  • Salt

Recipe

  • Heat mustard oil in a pan and temper kalonji and cumin seeds.
  • Once tempering is done, add the potatoes and saute until they turn golden.
  • Add drumsticks followed by turmeric powder, red chilli powder and salt.
  • Close the lid of the pan and cook for 15-20 minutes.
  • Finally, add the mustard seed paste and mix well.
  • To balance the taste and pungent flavour of the mustard paste, add a bit of sugar.
  • To get the consistency of your desire, add water to make the sabzi runny or semi-gravy.
  • Accompany this dish with warm basmati rice and moong dal.

Drumstick fry

Cooking time: 30 minutes

Ingredients

  • Drumsticks
  • Coriander powder
  • Chilli powder
  • Turmeric powder
  • Pinch of asafoetida
  • Curry leaves
  • Mustard seeds
  • Oil
  • Salt

Recipe

  • Heat the oil and temper mustard seeds and curry leaves.
  • Add the drumsticks to the oil and stir-fry them.
  • Flavour the drumsticks by adding the chilli powder, turmeric powder, coriander powder and salt.
  • For 5-10 minutes, stir fry the drumsticks on high flame to acquire a burnt smokey flavour.
  • Turn the gas off, add a pinch of asafoetida and mix it well.
  • Enjoy the dish as a snack or accompany it with rice, roti or paratha.

Despite being used mainly as an ingredient, these solo dishes of drumstick are worth a try, given how unexplored they have remained for a long.
