Sabzi of the Day - Radish Made Easy: Fresh and Quick Recipes for Busy Days

Given winter is around the corner, it’s time to add the goodness of radish into your everyday meals

With winter around the corner, several seasonal fruits and vegetables make their way into our local markets. Among them is radish, a crunchy vegetable with a mild yet pungent flavour that is super nutritious and has several health benefits. Although it is mostly eaten as part of a salad, there are several unique dishes one can prepare with radish.

Garlic Roasted Radish

Cooking time: 30 minutes

Ingredients

  • Fresh globe radishes
  • Butter
  • Sea salt
  • Ground black pepper
  • Garlic cloves
  • Dried parsley

Recipe

  • Cut the round globe radishes into two equal halves.
  • Chop or grate a good number of garlic cloves.
  • In a bowl, put the radish and add the cloves, followed by a generous amount of butter, sea salt, ground black pepper, and dried parsley.
  • One can also use ghee or olive oil as an alternative to butter.
  • Put the bowl in a microwave and bake at around 230 degrees Celsius for 15 minutes.

Radish Curry

Cooking time: 45 minutes

Ingredients

  • Fresh Radish
  • Tomatoes
  • Onion
  • Ginger
  • Green chillies
  • Coriander powder
  • Cumin
  • Red chilli powder
  • Turmeric powder
  • Garam masala
  • Coriander leaves

Recipe

  • Heat any oil in a pan as per your liking.
  • Add cumin and slit green chillies. Let the cumin splutter.
  • Once done, add chopped onions and let them get soft.
  • The next step is to include tomatoes and continue sautéing.
  • Add all the spices, i.e., coriander powder, red chilli powder, turmeric powder and garam masala. Give everything a good stir for two minutes.
  • Add the radish, mix everything properly and close the lid. Let the dish cook for 15-20 minutes.
  • A simple radish curry is ready to be served with rice or parathas. Sprinkle chopped coriander leaves on top as a garnish.

Mullangi/Radish Poriyal

Cooking time: 40 minutes

Ingredients

  • Grated radish
  • Grated coconut
  • Mustard oil
  • Urad dal
  • Green chillies
  • Curry leaves

Recipe

  • Heat oil in a pan and temper urad dal along with slit green chillies and curry leaves.
  • Once the urad dal splutters, add the grated radish and cook on a medium flame for five minutes.
  • Close the lid and cook for another four minutes on low flame. Stir once or twice in between so that the radishes at the bottom do not get burnt.
  • Once added, put off the gas and add the grated coconut.
  • Mix well, and the dish is ready.

Mooli/Radish Paratha

Cooking time: 45 minutes

Ingredients

For stuffing:

  • Radish/Mooli
  • Salt
  • Onion
  • Green chillies
  • Chopped coriander leaves
  • Cumin powder

For dough:

  • Wheat Flour/Atta
  • Salt
  • Oil
  • Carom seeds/ajwain
  • Nigella seeds/kalonji

Recipe

  • Grate the radishes and mix well with salt. Leave it for 15 minutes or more. Every five minutes, squeeze the excess water.
  • In a bowl, prepare the dough by mixing the atta, water, salt, ajwain, and kalonji. Add a bit of oil or ghee to the dough, depending on the quantity you are making.
  • Once the dough is ready, divide it into smooth balls.
  • Stuff the radish in the balls and flatten it carefully. Try your best not to form cracks in the parathas.
  • Fry them in oil, and mooliparathas are ready to be served with curd, chutney, or sauce.
