Sabzi of the Day - Lemon Basil Mixed Veggies: Fresh Flavours in Every Bite

A mix of vegetables garnished with lemon and basil, and there you have it, a recipe that oozes out freshness in every bit

Lemon and basil are two ingredients that are rarely used as core ingredients to create a dish or two. However, when our editorial decided to choose lemon and basil as the core ingredients coupled with vegetables, we accepted the challenge to find recipes that were in line with the above-mentioned chosen headline.

In the following paragraphs, check out these drool-worthy vegetable mixes with a flavour of mixed lemon and basil leaves.

Mixed Vegetable Medley

Cooking time: 45 minutes

Ingredients

  • Red Bell Pepper
  • Zucchini
  • Yellow Squash
  • Sweet Onion
  • Eggplant
  • Broccoli
  • White Mushrooms
  • Kosher Salt and Black Pepper
  • Whole Fennel Seed
  • Crushed Red Pepper Flakes
  • Dried Oregano
  • Garlic
  • Fresh Basil
  • Olive oil
  • Lemon

Recipe

  • Heat olive oil in a skillet.
  • Add all the vegetables and saute them until they become crisp.
  • Add all the spices and keep sautéing the vegetables.
  • Next, add the fennel seeds, kosher salt and black pepper.
  • Once the vegetables are properly cooked, turn off the gas.
  • Make sure the vegetables are cooked, but they do not release too much water. Otherwise, the dish will become soggy.
  • Garnish by drizzling a good amount of lemon and tonnes of chopped fresh basil leaves.

Lemon-Basil Roasted Vegetables Medley

Cooking time: 45 minutes

Ingredients

  • Zucchini
  • Red bell peppers
  • Red onion
  • Garlic
  • Tomatoes
  • Fresh basil leaves
  • Lemon juice
  • Lemon peel
  • Black pepper
  • Salt
  • Butter

Recipe

  • Start by pre-heating a pan at 450 degrees Fahrenheit.
  • In a shallow roasting pan, add butter, zucchini, red bell peppers and onion.
  • Roast until 45 minutes. Once done, toss the garlic.
  • In a separate bowl, mix tomatoes, lemon juice, lemon peel, and black pepper. Mix the vegetables and add salt to taste.
  • Finally, add chopped fresh basil leaves, and the dish will be ready.

Chopped Grilled Vegetable Salad with Lemon Basil Vinaigrette

Cooking time: 45 minutes

Ingredients

  • Bell pepper
  • Zucchini
  • Onion
  • Asparagus
  • Mushrooms
  • Avocado oil
  • Basil
  • Lemon
  • Garlic
  • Champagne vinegar
  • Extra virgin olive oil
  • Salt
  • Goat cheese

Recipe

  • Chop all the vegetables and brush them with avocado oil.
  • Grill the vegetables in an oven at 450 degrees Fahrenheit.
  • Now move on to creating the lemon basil vinaigrette.
  • In a blender, add basil, lemon, onion, garlic and champagne vinegar and blend for 10 minutes.
  • Mix the grilled vegetables with the vinaigrette on a plate.
  • Add salt to taste.
  • Garnish with crumbled goat cheese. However, you can skip it if you wish the salad to be dairy-free.
