Naturally gluten-free, cauliflower is a healthy vegetable that goes well with rice as well as roti and paratha Winter is here, and so is the season of fresh cauliflower. A staple food across India, cauliflower packs tons of nutritional value, comprising calories, fibre, vitamin C, vitamin K, manganese, and more. Therefore, it is essential to include cauliflower in your meals at least twice a week. Ahead of the jolly good winters, we have compiled a number of super tasty cauliflower recipes for you. Shorshe Phulkophi (Mustard Cauliflower Curry) From the state of West Bengal, we present you the recipe for Shorshe Phulkophi, which goes incredibly well with a bowl of basmati rice. Cooking Time: 20 minutes Ingredients 1 medium-sized cauliflower, cut into florets, to taste salt 1/2 tsp. turmeric powder 2-3 green chilies, slit 1-2 tbsp. mustard seeds/kasundi (bottled mustard paste) 2 tbsp. mustard oil 1 tsp. kalonji (nigella seeds) 2-3 tbsp. coriander leaves, chopped Recipe Soak mustard in water for 15-20 minutes and then paste it with chilies. The second step is to marinate the cauliflower in that paste along with turmeric and red chili powder for 15-20 minutes. Heat mustard oil in a pan and temper kalonji for 30 seconds. Once done, add the cauliflower and let it cook on a slow flame. Sprinkle water at intervals and let it cook until the cauliflower is soft. Once done, add chopped coriander on top. Gobi Poriyal Gobi Poriyal is a famous dish in South India that is made with simple ingredients but an array of spices that elevate one’s taste buds. Cooking Time: 30 minutes Ingredients 1 cup of cauliflower ¾ cup of green peas 1 onion, chopped 2 tomatoes, chopped 1 tsp ginger garlic paste ½ tsp cumin ½ tsp turmeric ½ sambar masala powder Salt to taste A handful of fresh coriander leaves, chopped 3 tbsp oil Recipe Add oil to the pan and fry the cauliflower and peas together. Once done, keep them aside and let them cool down. In the same pan, add the cumin seed, then add the onions, followed by ginger, garlic paste, and tomato. Add all the above-mentioned masalas. Finally, add the cauliflower and let the dish cook. Once cooked, add chopped coriander, and the dish is ready. GobhiBatata Rassa The traditional Maharashtrian dish, GobhiBatata Rassa, is a delicious dish that is naturally vegan, gluten-free, nut-free, and soy-free. Cooking Time: 30 minutes Ingredients 1 cup of cauliflower 2 potatoes Salt to taste ½ tsp turmeric One tablespoon of mustard seeds ½ tsp cumin ½ tsp asafoetida 1 onion, chopped 100 grams grated coconut 1 tomato ½ Maharashtrian goda masala ½ deggimirch masala Recipe Blanch the vegetables, drain the water, and keep them aside. Cook the curry base by adding the spice in oil, including the grated coconut, potato, and tomato. Let it cook until the mixture thickens. Add the vegetables and let the curry simmer.
