Fried Onion Rings

Total Cooking Time: 20 minutes

Ingredients

  • 1 cup sifted plain flour
  • 1 3/4 Tbsp salt
  • 1 1/2 Tbsp baking soda
  • 1 egg yolk
  • 2/3 cup milk
  • 1 Tbsp salad oil
  • 1 egg white (folded in last)
  • Onions
  • Vegetable Oil for deep frying

Recipe

  • Wash the onions thoroughly, peel and slice them. Make sure the slices are ¼ inches thick.
  • Now, in a separate bowl, place the onion rings and submerge them in cold water for 30 minutes.
  • Now drain the rings completely and wipe them dry.
  • Now, mix all the ingredients listed above (except egg white and oil) to prepare a batter.
  • Dip the onion rings in the thick batter and deep fry in oil till golden brown and crisp.
  • Make sure to preheat the cooking utensil and oil before frying the onions.

Pyaaz ke Pakode (Fried Onion Fritters)

Total Cooking Time: 30 minutes

Ingredients

  • 2 Cups besan
  • ½ cup rice flour
  • ½ tsp salt
  • ½ tsp ajwain
  • ½ tsp ginger
  • 2 tsp red chili powder
  • ¼ tsp baking soda
  • 1 cup coriander leaves
  • 1 cup water
  • 1/2 cup oil
  • 6 pieces onion
  • 3 Green chillies

Recipe

  • In a mixing bowl, add besan, rice flour, salt, ajwain, red chili powder, baking soda and green chillies.
  • Mix all the ingredients together, very thoroughly and then add chopped coriander leaves to the mixture.
  • Now prepare a batter out of this mixture. Gradually add water and stir the mixture until it thickens into a paste.
  • Preheat the pan and add some vegetable oil to it. Let the oil heat up.
  • Dip the onion slices completely in the batter and then fry them over medium to low heat.
  • Deep fry them until they turn crisp and golden brown.

Serve garma-garam Pyaaz ke pakode with green chili garnishing and tomato ketchup.

Pyaaz Paneer (Cottage Cheese prepared with onions)

A super-delicious and easy-to-make Paneer recipe with caramelized onions and a bit of seasoning.

Total Cooking Time: 25 minutes

Ingredients

  • 250 gm paneer, cut into small cubes
  • 3 large onions, chopped (not too finely)
  • 2 Tbsp oil
  • 1 green chili slit length wise
  • 1 tsp jeera
  • 2 Tbsp chopped ginger
  • 1 tsp garam masala
  • 1 Tbsp dried dhaniya powder
  • Red chili powder, to taste
  • Salt, to taste
  • Chopped coriander leaves for garnishing

Recipe

  • Preheat the pan/wok/kadhai and oil to eat. Heat the oil properly.
  • Add jeera to the oil and let it flutter. Then add green chillies.
  • Now add the chopped ginger and onions. Saute till the onions are translucent.
  • Add salt, garam masala, dried dhaniya powder, and red chili powder.
  • Cook the onions until dark brown.
  • In case the onions start to burn, add a little water to the pan.
  • Once the onions are cooked, add the cubes of paneer and cook for 2 minutes

Garnish with chopped coriander and serve!

Onion Marmalade

Total Cooking Time: 45 minutes

Ingredients

  • 1 Kg onions
  • 4 tbsp salad/olive oil
  • 100 gms sugar/jaggery
  • 300 ml vinegar
  • 4 cloves
  • 2 bay leaves
  • 2 tbsp tomato puree
  • A pinch of chili powder to taste salt and pepper

Recipe

  • Heat oil in a pan, add the onion slices and saute until they are soft.
  • Add the remaining ingredients and cook for an hour.
  • Re-season
  • Cool the preparation and store it in a clean and dry jar.

Serve on toasts or canapes. You can even accompany this jam with cold cuts.

French Onion Soup

A quintessential French onion soup served with cheese souffle.

Ingredients

For the soup:

  • 3 Tbsp olive oil
  • 20 gm butter
  • ½ tsp castor sugar
  • ½  kg onions - sliced
  • 5 cups vegetable stock
  • 4-6 rounds of buttered toast

For the souffle:

  • 20 gm butter
  • 1 ½ Tbsp flour
  • ⅔ cups warm milk
  • ½  tsp French mustard
  • Salt - to taste
  • Pepper - to taste
  • 2 egg yolks
  • 4 Tbsp grated cheese
  • 3 egg whites
  • 1 tsp bread crumbs

Recipe for the Soup

  • Take a deep vessel and heat butter in it. Then add olive oil and castor sugar to it.
  • Add onion and saute on low heat until they turn golden brown.
  • Pour the stock into the pan and bring to a simmer.
  • Cover and boil for about one hour. The quantity of soup should now be reduced to four cups.

Recipe for the Souffle

  • Take a saucepan and heat butter in it.
  • Add the flour and stir over low heat for some time until it makes a paste.
  • Now, pour the milk and continue to stir till it brings to a boil, turning it into a smooth, thick sauce.
  • Now, mix in the mustard, salt and pepper.
  • Switch off the gas and add cheese to it and stir.
  • Let the sauce cool. Once cold, add beaten egg yolks gradually to it with a wooden spoon.
  • Take another bowl. Add and whisk the egg whites with a pinch of salt. Whisk until it is stiff but not dry.
  • Fold the egg whites into the cheese sauce very lightly.
  • Now pour the soup into a baking dish and place the toasts on top.
  • Then pour in the Souffle mixture over the toasts.
  • Sprinkle break crumbs, cheese and butter on top.
  • Heat the oven to 230 degrees. Bake the preparation for around 20 minutes and until the souffle rises well and is golden in color.

Serve it immediately and relish!
