Cooking Time: 25 minutes

Ingredients:

  • Extra-virgin olive oil
  • Onion
  • Garlic cloves
  •  Fresh ginger
  • Carrots
  • Carrot greens (finely chopped)
  • Vegetable stock
  • Coconut milk
  • Salt to taste

Instructions:

  • Heat olive oil in a pan and sauté onions until soft and translucent (about 5 minutes).
  • Add garlic and ginger, cooking until fragrant (around 2 minutes).
  • Toss in roasted carrots, seasoning with salt. Stir in the vegetable stock, coconut milk, and carrot greens. Cover and let simmer for 8-9 minutes on low heat.
  • Remove from heat and allow the mixture to cool slightly. Blend until smooth and strain for a silky texture.
  • Return the soup to the pan and let it bubble for 4-5 minutes. Adjust seasoning, serve hot, and watch the chill melt away.

Lemon and Cilantro Soup

Cooking Time: 30 minutes

Ingredients:

  • Lemon zest
  • Fresh coriander leaves
  • Water
  • Mixed Vegetables
  • Lemon juice
  • Salt
  • Black pepper (ground)
  • Green chillies (optional)

Recipe

  • Wash and roughly chop coriander leaves. Combine lemon zest, green chillies, and 4 cups of water in a pot. Let it boil on low heat for 15 minutes. Strain and discard the leaves to prepare a fragrant coriander-lemon stock.
  • Separately, chop vegetables and boil them in 1 cup of water for 2 minutes. Add the coriander-lemon stock, and simmer for another 5 minutes.
  • Stir in salt and pepper. Turn off the heat and add lemon juice just before serving.
  • Garnish with fresh coriander leaves and serve hot. The tangy twist is sure to brighten your day.

Vegetable and Basil Soup

Cooking Time: 30 minutes

Ingredients:

  • Fresh basil leaves
  • Vegetable oil
  • Onions
  • French beans
  • Carrots
  • Potatoes
  • Cabbage
  • Spaghetti
  • Vegetable stock
  • Grated cheese (for garnish)
  •  Salt
  • Black pepper

Instructions:

  • Blend basil leaves with ¼ cup of water to make a smooth paste. Set aside.
  • In a heated skillet, sauté onions, french beans, and carrots in oil for 3-4 minutes.
  • Stir in spaghetti and vegetable stock. Simmer for 5 minutes before adding potatoes and cabbage.
  • Cook for 10-15 minutes, stirring occasionally. Mix in the basil paste, salt, and pepper. Let it simmer for another 2-3 minutes.
  • Serve hot with grated cheese on top for a creamy, aromatic finish.
