Carrot greens (finely chopped)
Vegetable stock
Coconut milk
Salt to taste
Instructions:
Heat olive oil in a pan and sauté onions until soft and translucent (about 5 minutes).
Add garlic and ginger, cooking until fragrant (around 2 minutes).
Toss in roasted carrots, seasoning with salt. Stir in the vegetable stock, coconut milk, and carrot greens. Cover and let simmer for 8-9 minutes on low heat.
Remove from heat and allow the mixture to cool slightly. Blend until smooth and strain for a silky texture.

Lemon and Cilantro Soup
Cooking Time: 30 minutes
Ingredients:
Lemon zest
Fresh coriander leaves
Water
Mixed Vegetables
Lemon juice
Salt
Black pepper (ground)
Green chillies (optional)
Recipe
Wash and roughly chop coriander leaves. Combine lemon zest, green chillies, and 4 cups of water in a pot. Let it boil on low heat for 15 minutes. Strain and discard the leaves to prepare a fragrant coriander-lemon stock.
Separately, chop vegetables and boil them in 1 cup of water for 2 minutes. Add the coriander-lemon stock, and simmer for another 5 minutes.
Stir in salt and pepper. Turn off the heat and add lemon juice just before serving.
Garnish with fresh coriander leaves and serve hot. The tangy twist is sure to brighten your day.

Vegetable and Basil Soup
Cooking Time: 30 minutes
Ingredients:
Fresh basil leaves
Vegetable oil
Onions
French beans
Carrots
Potatoes
Cabbage
Spaghetti
Vegetable stock
Grated cheese (for garnish)
Salt
Black pepper
Instructions:
Blend basil leaves with ¼ cup of water to make a smooth paste. Set aside.
In a heated skillet, sauté onions, french beans, and carrots in oil for 3-4 minutes.
Stir in spaghetti and vegetable stock. Simmer for 5 minutes before adding potatoes and cabbage.
Cook for 10-15 minutes, stirring occasionally. Mix in the basil paste, salt, and pepper. Let it simmer for another 2-3 minutes.
Serve hot with grated cheese on top for a creamy, aromatic finish.
