Sabzi of the Day - Root Veggies Mix: Carrots, Beets, and More in One Pan

Here's the recipe for a simple, colorful, and wholesome dish that you cannot get enough of!

In 'Swades' (2004), Shah Rukh Khan's character, Mohan Bhargava, says that while the stars in our galaxy are already beautiful individually, they shine even brighter when they come together, and then can be imagined into anything that we want. Obviously, this is a metaphor for people - however, it also holds for food, specifically root vegetables. Each root vegetable (from potatoes to carrots to beetroots to radishes) is healthy and delicious on its own. But when you toss all of them together in a pan with a few other ingredients, you create a whole new dish that's simply irresistible. And it's a super comforting and wholesome dish that requires minimal time in preparation.

For today's sabzi of the day, our pick is root veggies mix. Read ahead to learn the recipe, health benefits, and more.

Ingredients:

2 medium-sized carrots

2 medium-sized beets

2 medium-sized sweet potatoes

1 turnip

1 celery root

1 radish

2 parsnips

3 cloves garlic

2 teaspoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon raw honey

1/2 teaspoon rock salt

1/2 teaspoon black pepper

Recipe:

First, peel all the root vegetables, and then chop them into small pieces.

Place a non-stick pan on medium heat.

Drizzle olive oil into the pan, and add the garlic and rosemary to it. Sauté for 2 minutes.

Now, add all the root vegetables to the pan, and stir well. Add rock salt and black pepper as per taste.

Cook the veggies for about 10 minutes until they soften.

Drizzle the honey and balsamic vinegar, and mix well.

Once done, turn off the heat, and serve!

Why You Should Try It

By mixing all the root vegetables together, you are getting a combination of various flavors in every bite.

Not only flavors - it's also a powerhouse of nutrients for the same reason. There's everything from fibers to vitamins and minerals to antioxidants.

It's a comforting and satisfactory dish that you can enjoy at peace.

Things To Keep In Mind

Peel all the root vegetables to prevent any bitterness in the dish.

Cut all the veggies into uniform pieces to maintain a consistent texture.

Stir the veggies properly to avoid sticking or burning.

Make sure to use a large pan so that it doesn't get overcrowded. If there's an issue, cook in batches.

Olive oil is the best for this dish. If not available, go for sunflower oil or avocado oil.

Feel free to add more spices (such as cumin powder, coriander powder, etc.) to make it even more delicious. And for an extra crunch, add some roasted peanuts or pumpkin seeds.

Don't overcook as the veggies can then become mushy. Remember, they should retain their natural crunch.

Now, The Most Important Part - Health Benefits

As already mentioned, the root veggies mix is packed with various nutrients. And hence, if consumed regularly, it may help benefit your health in numerous ways.
