2 medium-sized carrots
2 medium-sized beets
2 medium-sized sweet potatoes
1 turnip
1 celery root
1 radish
2 parsnips
3 cloves garlic
2 teaspoons olive oil
1 teaspoon balsamic vinegar
1 teaspoon raw honey
1/2 teaspoon rock salt
1/2 teaspoon black pepper
First, peel all the root vegetables, and then chop them into small pieces.
Place a non-stick pan on medium heat.
Drizzle olive oil into the pan, and add the garlic and rosemary to it. Sauté for 2 minutes.
Now, add all the root vegetables to the pan, and stir well. Add rock salt and black pepper as per taste.
Cook the veggies for about 10 minutes until they soften.
Drizzle the honey and balsamic vinegar, and mix well.
Once done, turn off the heat, and serve!
