Vellarikka Pachadi (Kerala-Style Cucumber Yoghurt Curry)

Ingredients:

2 medium cucumbers, peeled and chopped

1 cup thick curd (yoghurt)

1 green chilli, finely chopped

1 tsp mustard seeds

1 tsp coconut oil

A pinch of turmeric powder

A handful of curry leaves

Salt, to taste

Fresh coriander for garnish

Method:

Cook the chopped cucumber with turmeric, salt, and a splash of water until tender. Let it cool.

Whisk the curd until smooth, then mix in the cooked cucumber and green chilli.

Heat coconut oil, add mustard seeds and curry leaves, and let them crackle. Pour this tempering over the yoghurt mixture.

Garnish with fresh coriander and serve chilled.

2 large cucumbers, diced (seeds removed)

1 tsp cumin seeds

1 small onion, chopped

1 green chilli, slit lengthwise

1 tsp turmeric powder

1 tsp coriander powder

2 tbsp mustard oil

Salt, to taste

A squeeze of lemon juice

Fresh mint leaves for garnish

Method:

Heat mustard oil until it smokes lightly. Add cumin seeds and let them splutter.

Sauté onions and green chilli until golden. Stir in turmeric and coriander powder.

Add the diced cucumber and salt. Cook on medium heat for 5–7 minutes, stirring occasionally.

Finish with a squeeze of lemon and a sprinkle of fresh mint. Serve hot with roti or rice.
