Basundi

Basundi is a rich and creamy dessert item and is an excellent option to relish on Akshay Tritiya.

Ingredients: Milk, sugar, saffron, cardamom powder, and chopped nuts

Recipe: First, pour two cups of milk into a pan, heat on medium flame, and bring it to a boil. Reduce the heat to low when the milk starts boiling, and let it thicken for around 30 minutes. Add 1/2 cup sugar and a few saffron strands to the milk, and continue simmering it for another half an hour. Now, when the mixture thickens completely, add 1/4 teaspoon of cardamom powder all over it and turn the heat off. Refrigerate it for a couple of hours and garnish with the chopped nuts before serving.

Pal Payasam

Originating in South India, Pal Payasam is a delectable item that is everyone's favorite.

Ingredients: Rice, milk, sugar, cardamom, saffron, ghee, almonds, cashews, and raisins.

Recipe: First, wash 1 cup of rice with clean water, drain, and set aside. Heat one teaspoon of ghee in a pan over medium heat. Now, add the rice to it and roast for a couple of minutes until the mixture turns golden. Add four cups of milk and stir well, bringing it to a boil. Reduce the heat to low, and let it boil for around 15-20 minutes. Once the mixture gets creamy, add one cup of sugar to it and stir well for the sugar to dissolve. Add almonds, cashews, and raisins, stir, and let all the ingredients come to a neutral flavor. Turn off the heat and serve the Pal Payasam hot.

Lauki Ka Halwa

Ingredients: Lauki, milk, sugar, ghee, almonds, cashews, raisins, and cardamom powder

Recipe: First, heat 1 teaspoon of ghee in a pan over medium heat, and roast the almonds, cashews, and raisins. Keep these aside in a bowl when they turn slightly golden. Now, in another pan, add 500 grams of shredded lauki and saute for a few minutes until it changes color. Add 1/2 cup milk and stir properly until the mixture gets a good consistency. Add 1/2 cup sugar and 1/4 teaspoon of cardamom powder, and mix. Once done, garnish with roasted almonds, cashews, and raisins, and serve.
