Ingredients:

1 large cucumber (peeled and chopped)

1 cup plain yogurt

1/4 cup fresh mint leaves

1 small green chili (optional, for a spicy kick)

1/2 teaspoon roasted cumin powder

Salt and pepper to taste

1/4 cup cold water

Instructions: Begin with blending the chopped cucumber, yogurt, mint leaves, and green chili until they become smooth. After adding roasted cumin powder, salt, and pepper, blend again. You can also add some cold water to achieve the desired consistency. Refrigerate the paste for at least half an hour. Before serving, garnish with mint leaves or a pinch of cumin powder.

4 medium tomatoes (blanched and peeled)

1/4 cup fresh basil leaves

1 small onion, chopped

1 clove garlic, minced

Salt and pepper to taste

1 teaspoon olive oil

1/2 teaspoon sugar (optional)

Cold water as required

Instructions: Begin with blanching the tomatoes in hot water for a minute, peel off the skin, and then chop. Now, blend the tomatoes along with basil, onion, garlic, salt, and pepper until they beome smooth. Add some olive oil and sugar before blending again. To adjust the consistency, add cold water. Now, refrigerate the freshly prepared soup for 30 minutes before serving chilled. Don’t forget to garnish with basil leaves.

2 cups watermelon (deseeded and chopped)

1/2 teaspoon black salt

1 ripe avocado

1/2 cup spinach leaves

1/2 cucumber (peeled and chopped)

1/4 cup plain yogurt

1 tablespoon lemon juice

Salt and pepper to taste

Cold water as needed

Instructions: Blend avocado, spinach, cucumber, yogurt, and lemon juice until a smooth paste is prepared. Now add salt and pepper to taste and adjust the consistency with cold water if required.
