Savour the Richness of The Festival of Lights With these Simple Yet Finger-Licking Recipes

Diwali- the vibrant festival of lights- welcomes prosperity, good health and happiness in our lives. On this day, people, irrespective of their age, celebrate with firecrackers and diyas. It's the perfect time for the families to bond, old friends to reunite, and spend a wholesome moment together.

Diwali is also known for the variety of delectable dishes prepared on this day. From sweets and desserts to palatable snacks and meals, the festival brings a whole lot of savoury memories to the plate. In this article today, we will have a look at some of the best Diwali recipes to prepare at home.

Kaju Barfi

Who doesn't love these diamond-shaped cashew and milk based sweets? Not only are they easy to prepare and can be made at home readily, they are absolutely mouth-watering delicious!

Ingredients:

  • 1 cup cashews (kaju)
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 tsp cardamom powder (optional)
  • 1 tsp ghee (for greasing)
  • Silver leaf (varak) for garnish (optional)

Instructions:

1. Grind Cashews: Blend cashews into a fine powder. Make sure they don't release oil.

2. Prepare Sugar Syrup: In a pan, add sugar in water and dissolve over medium flame to the point it reaches a one-string consistency.

3. Prepare Dough: Add powdered cashews to the sugar syrup and stir continuously until it thickens into a dough. Add cardamom powder if you like.

4. Set Barfi: Grease a plate and transfer the mixture onto it. Flatten evenly using a rolling pin.

5. Cool & Cut: Let it cool, then cut into diamond shapes and garnish with silver leaf if you want to present the traditional Kaju Barfi.

Chakli

Made with rice flour and deep-fried in hot oil, Chakli is a delectable crispy snack perfect for the occasion of Diwali. The dish is also popularly known as Murukku in South India, and is served in huge numbers during Diwali and Narak Chaturdashi celebrations in Maharashtra.

Ingredients:

  • 1 cup rice flour
  • 1/4 cup gram flour (besan)
  • 1 tbsp butter (softened)
  • 1/2 tsp cumin seeds
  • 1/2 tsp sesame seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt, to taste
  • Water, as needed
  • Oil, for deep frying

Instructions:

1. Prepare the Dough: Mix rice flour, gram flour, cumin seeds, sesame seeds, turmeric, chili powder and salt in a bowl. Add softened butter to it and mix well. Add water gradually (not at once) to form a smooth dough that doesn't stick to the bowl.

2. Shape the Chakli: Fill a chakli maker with the prepared ough. Press out spiral shapes onto a tray or plate.

3. Fry the Chakli: Heat oil in a pan on medium flame. Dip and fry the chaklis until golden brown and crisp. Remove with a slotted spoon and drain on paper napkins.

4. Serve: Let cool completely before storing in an airtight container. Enjoy!

Coconut Barfi

A mouth-watering delight made of khoya, ghee, fresh coconut flakes and sugar.

Ingredients:

  • 2 cups grated coconut (fresh or desiccated)
  • 1 cup condensed milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup milk
  • 1/2 tsp cardamom powder
  • 1 tbsp ghee
  • Chopped nuts (optional, for garnish)

Instructions:

1. Set the Pan: Grease a plate or small tray with ghee to set the barfi later.

2. Cook the Mixture: In a pan, heat ghee and add grated coconut. Saute on low flame for 2-3 minutes.

3. Add Milk & Sugar to the Pan: Pour in milk and sugar. Stie continuously to the point the sugar dissolves.

4. Add Condensed Milk: Mix in condensed milk and cook on medium heat until the mixture thickens and detaches from the sides of the pan.

5. Add Flavor: Sprinkle cardamom powder and mix well.

6. Set the Barfi: Pour the mixture into the greased tray, spread evenly, and press down.

7. Cool & Cut: Let it cool, then cut into squares. Garnish with nuts according to your taste.

Rasmalai

A palatable, melt-in-mouth treat prepared from chenna and cardamom essence.

Ingredients:

For Rasgullas:

  • 1 liter milk
  • 2 tbsp lemon juice
  • 1 cup sugar
  • 4 cups water

For Rabri (milk syrup):

  • 1 liter milk
  • 1/4 cup sugar
  • 1/4 tsp cardamom powder
  • 10-12 saffron strands
  • Chopped pistachios and almonds for garnish

Instructions:

1. Make the Rasgullas:

Add lemon juice to boiled milk to curdle it. Use a cloth to strain the curdled milk to obtain paneer. Wash it and squeeze excess water.

Now, knead the paneer until smooth and roll into small balls.

Next, boil water, add sugar to it and let it dissolve. Add the paneer balls, and cover and cook for 15-20 minutes. You'll notice them doubling in size. Now, let cool.

2. Prepare Rabri:

Simmer milk to the point the volume reduces by half. Add sugar, saffron and cardamom to it, and stir until the mixture thickens.

3. Assemble:

Squeeze excess syrup from rasgullas, add them to the rabri. Chill in the fridge, garnish with nuts, and serve cold.
