Plantains, or raw bananas, are a highly versatile dish, given they can be cooked in various methods ranging from boiled to fried. Not to forget, plantain is also highly beneficial for human health given it comprises potassium, magnesium, copper, manganese, fibre and several vitamins. Raw banana helps with digestion, sugar level in blood, weight management, is good for heart health, and has tonnes of other benefits. Therefore, plantain must be consumed at least once a week.

Plantain kofta
Cooking time: 45 minutes
Ingredients
Boiled plantain
Split chickpea paste (Chana daal paste)
Ginger
Chillies
Salt
Cumin seeds
Bay leaves
Onion
Garlic
Tomatoes
Cumin powder
Coriander powder
Turmeric powder
Salt
Mustard oil
Recipe
Start by boiling plantains and split chickpeas.
Once done, blend the split chickpea in a blender along with a little ginger and chillies.
Mix this paste with boiled plantain and mash everything together to create small balls.
Fry these balls in mustard oil and keep them aside.
In another pan, heat mustard oil and temper cumin seeds and bay leaves.
Next, add a paste of onion, tomatoes, ginger, and garlic.
Sauté them and add the three powders mentioned.
Once the powders are cooked, toss the fried balls.
Add salt as per your taste.
Pour water as per your requirement and the consistency you like.

Plantain bharta
Cooking time: 20 minutes
Ingredients
Boiled plantain
Chopped onion
Chopped green chillies
Salt
Mustard oil
Chopped coriander leaves
Recipe
Start by boiling the plantain.
Once done, mash them.
Heat mustard oil in a pan.
Toss the green chillies and chopped onion.
Add the mashed plantain to the pan.
Add salt as per taste.
Fry on high flame to acquire a rustic taste.
Finish by garnishing with chopped coriander leaves on top.

Plantain khosa bata (raw banana skin paste)
Cooking time: 30 minutes
Ingredients
Plantain
Green chillies
Garlic
Mustard oil
Nigella seeds
Turmeric powder
Salt
Recipe
Boil the plantain. Once done, take the skin off.
Blend the plantain skin with green chillies and garlic.
In a pan, heat mustard oil.
Add nigella seeds and let it temper.
Add the plantain skin to the pan.
Add turmeric and salt.
Stir fry the paste till it releases all the water and becomes dry.
Serve the plantain paste with rice.

Plantain chips
Cooking time: 30 minutes
Ingredients
Plantain
Avocado oil
Sea salt
Red paprika
Recipe
Peel the skin of the plantain.
Once removed, cut the plantain into thin pieces similar to the consistency of chips.
Drizzle a little bit of olive oil, salt, and paprika to coat the plantain.
Prepare your oven—preheat the oven to 180 degrees Celsius.
Bake them at the same temperature until they turn crispy.
