Let's give a twist to your regular bhindi dish and turn it into a creamy delight!
If you hate bhindi, well, chances are you are cooking it the wrong way. See, it doesn't always have to be the everyday fries or curries that you'll eventually get bored of. Rather, why not pair it with some other ingredients and make it insanely delicious? Having said that, I have a recipe that will just make you fall in love with bhindi! And don't worry, it's unbelievably easy to prepare!
The goodness of bhindi merged with the creaminess of peanut butter - this dish is both comforting and delicious. And there's a subtle nutty texture (thanks to the peanut butter) that you simply cannot get enough of.
350-gram bhindi (cut into small pieces), 2 teaspoons peanut butter, 1/2 cup chopped onions, 1/2 cup tomato puree, 1 teaspoon ginger-garlic paste, 2 teaspoons mustard oil, 1 green chili, 1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala, 1/2 teaspoon red chili powder, 1/2 teaspoons cumin seeds, 1/2 cup coconut milk, and salt.
First, heat oil in a pan over medium flame. Add the bhindi and saute until crisp.
In another pan, heat some oil, and add cumin seeds, green chili, and ginger-garlic paste. Cook for 2 minutes and then add chopped onions.
Once the onions turn golden brown, pour in the tomato puree and cook for 10 minutes.
Add garam masala, coriander powder, and red chili powder, and mix everything well.
Now, add peanut butter and then coconut milk, and stir properly.

Add salt as per taste. And make sure to add a splash of water to bring it to a good consistency.
Now add the crispy bhindi to the mixture and mix well.
Cook it on low flame for 10 minutes. Stir occasionally and add water if required.
Once done, garnish it with roasted peanuts and serve it hot alongside rice.
Go for tender bhindi so that it's not chewy.
After washing the bhindi, make sure to pat it dry completely before cooking.
If coconut milk is not available, go for yogurt or almond milk.
Feel free to add more red chili powder to make the dish spicier.
Make sure to not prepare the gravy in the same pan where you sautéed the bhindi.
Use homemade tomato puree for the best taste.
Don't overcook as it may make the bhindi mushy.
