It happens. All of us have off days while cooking when we fail to accurately measure the ingredients for a dish. What’s next? Leftovers. Putting the same leftovers on a plate the next day and presenting them on the dinner table often takes away the smile from people’s faces. However, that doesn’t mean the leftovers are to be thrown away because we firmly believe in not wasting food.

Therefore, to save your day and the leftovers, we have compiled a number of recipes you can prepare using leftover ingredients.

Papad ki sabzi with leftover papad

Cooking time: 45 minutes

Ingredients

  • Leftover roasted or fried papad
  • Vegetable oil
  • Asafoetida
  • Chopped garlic
  • Chopped ginger
  • Green chillies
  • Chopped tomatoes
  • Coriander powder
  • Chilli powder
  • Whisked yoghurt
  • Dried fenugreek leaves
  • Salt
  • Water

Recipe

  • Start by heating vegetable oil.
  • Add chopped ginger, garlic, tomatoes, and chillies and let them cook.
  • Add coriander and chilli powder. Cook until they release their oil.
  • Now add the whisked yoghurt and keep stirring.
  • Toss the roasted or fried papad.
  • Add salt as per taste.
  • Finish by sprinkling asafoetida and dried fenugreek leaves and give the curry a mix.
  • You can add water if you wish to have a curry of thin consistency.

Vegetable semi-gravy daal with any sort of daal

Cooking time: 30 minutes

Ingredients

  • Boiled daal or cooked plain daal
  • Chopped carrots
  • Chopped beans
  • Cubed pieces of cauliflower
  • Peas
  • Turmeric
  • Chilli powder
  • Chopped onion
  • Chopped garlic
  • Salt
  • Vegetable oil
  • Chopped coriander leaves

Recipe

  • Let us assume you have leftover boiled daal or cooked plain daal.
  • Start by heating oil in a pan.
  • Add all the vegetables along with chopped onion and garlic.
  • Sauté everything until it turns golden brown.
  • Add turmeric and chilli powder.
  • Add salt as per your taste.
  • Now keep the flame on high and let the water reduce.
  • The consistency of this dish should be equivalent to that of daal makhani or pindichole.
  • Once done, serve with parathas or pooris.

Potato sabzi with leftover boiled potatoes

Cooking time: 30 minutes

Ingredients

  • Boiled leftover potatoes
  • Cumin seeds
  • Mustard seeds
  • Curry leaves
  • Asafoetida
  • Chopped garlic
  • Ground pepper
  • Turmeric powder
  • Chilli powder
  • Mustard oil

Recipe

  • Heat mustard oil and cumin seeds and mustard seeds.
  • Add garlic and curry leaves and allow everything to get tempered.
  • Add the boiled potatoes along with turmeric and chilli powder.
  • Sauté everything together. No worries if the potatoes get mashed.
  • End by sprinkling asafoetida and ground pepper powder.
  • Accompany with rice, rotis, pooris, or paratha.
  • You can even put this potato sabzi between two slices of bread, toast them, and eat like a sandwich.

Roti ki sabzi with leftover rotis

Cooking time: 30 minutes

Ingredients

  • Leftover roti cut into pieces
  • Vegetable oil
  • Cashew paste
  • Coriander powder
  • Garam masala
  • Chilli powder
  • Turmeric powder
  • Chopped onion
  • Grated garlic
  • Grated ginger
  • Slit green chillies
  • Chopped coriander leaves
  • Salt

Recipe

  • Start by heating oil in the pan.
  • Add grated garlic, ginger, and chopped onion and fry them till they are golden brown.
  • Add all the mentioned masalas and let them cook.
  • Add cashew paste and let it cook to become the dish’s base gravy.
  • Now that the gravy is ready, add the pieces of rotis.
  • Add salt.
  • Finish by sprinkling chopped leaves and adding slit green chillies.
