Sabzi of the Day - Chana Chor-y: Revamping Chickpeas with Zing
Turn it into a curry or eat them as snacks; chickpeas are one of the most versatile core ingredients one can find in Indian households
Although a legume of the Fabaceae family, chickpeas are often considered a vegetable in Indian households. Given their nutritional value, which comprises potassium, magnesium, thiamine, iron, zinc, copper, phosphorus, and several other nutrients, chickpeas are considered an important part of Indian meals. Therefore, chickpeas are used to prepare a variety of dishes, from curries to snacks.

Chickpea chaat
Cooking time: 30 minutes
Ingredients
Boiled chickpeas
Rock salt
Chaat masala
Chopped onion
Chopped tomatoes
Chopped cucumber
Chopped chillies
Black pepper powder
Chopped mint leaves
Yoghurt or lemon juice
Recipe
Boil the chickpeas first.
In a bowl, add all the ingredients with the boiled chickpeas.
Give it a good mix.
You can either add yoghurt or lemon juice as per your preference.
A bowl of healthy chickpeas chaat is ready. You can eat this in the evening as a snack or even in the morning as a breakfast dish.

Chickpeas kebab
Cooking time: 45 minutes
Ingredients
Chickpea
Mint leaves
Coriander leaves
Chopped onion
Ginger-garlic paste
Chopped spring onion
Salt to taste
Chilli powder
Cumin powder
Breadcrumbs or gram flour
Cooking oil
Recipe
Start by boiling the chickpeas.
In a pan, heat the vegetable oil.
Sauté chopped onions, ginger-garlic paste, mint and coriander leaves, chopped spring onions, chilli, and cumin powder.
Add the boiled chickpeas and salt.
Sauté until everything turns light brown, and turn off the gas. Let the ingredients cool down.
Once cold, blend them.
Now, give the blended chickpeas the shape of kebabs or tikkis.
Coat the kebabs with breadcrumbs or gram flour.
Fry in oil, and the kebabs or tikkis turn darkish brown.
Serve with any chutney or sauces of your preference.

Chickpea Shakshuka
Cooking time: 60 minutes
Ingredients
Olive or avocado oil
Diced onions
Red bell pepper
Garlic minced
Tomato paste
Coconut sugar or maple syrup
Sea salt
Smoked or sweet paprika
Ground cumin
Chilli powder
Ground cinnamon
Cardamom and coriander powders
Halve green olives
Recipe
In an iron skillet pan, heat olive oil and toss onion, bell pepper, and garlic.
Add the tomato paste, coconut sugar, sea salt, paprika, cumin, chilli powder, cinnamon, cardamom, and coriander powder and stir.
Add the chickpeas, olive oil, and salt.
If required, add more of any of the spices of your choice to balance the flavour.
Add a decent amount of water and let the curry simmer.
Bring it to a semi-gravy consistency.
Serve with brown rice, sourdough bread, or even pasta.

Chilli chana
Cooking time: 60 minutes
Ingredients
Boiled chickpeas
Kashmiri red chilli powder
Salt
Oil
Corn flour
Clove garlic, finely chopped
Ginger, finely chopped
Green chilli, slit
Spring onions, chopped
Onion, petals
Cubes capsicum
Red & green chilli sauce
Tomato sauce
Vinegar
Pepper, crushed
Soy sauce
Sugar
Salt
Recipe
Start by boiling the chickpeas.
Then, in a bowl, coat the chickpeas with a mix of corn flour and chilli powder.
In hot oil, fry the coated chickpeas until they turn crunchy.
In another pan, prepare the sauce by sautéing spring onion, onion, capsicum, ginger, garlic, and green chillies.
Add chilli, tomato sauce, vinegar, and soy sauce, and make the consistency thicker.
Finally, toss the fried chickpeas and sauté on high flame till the dish becomes dry.
Your hot bowl of chilli chana is ready.
